Good Morning Sunshine! The Earth says Hello! And what a beautiful day it is to bake cakes. Usually I would consider myself an ambitious, experimental baker. I like to have a long planning process thinking of all the wonderful flavours, colours and detail. This sort of baking takes a long time and doesn’t always turn out as planned. However there is nothing wrong with staying simple and making a classic cupcake!
My sister is the world’s biggest white chocolate fan so as a little treat last weekend, I made her raspberry and white chocolate cupcakes. I’m more of a milk chocolate fan and blueberries trumps raspberries every time but these were pretty good!
Using Rachel Allen’s Cupcake recipe I just added some chocolate chips and raspberries.
Ingredients:
110g butter
110g caster sugar
2 eggs
1/2 tsp vanilla extract
140g plain flour
Method:
~ Cream butter and sugar
~ Add eggs and vanilla and combine
~ Fold in flour and some rating agent
~ Mix in chocolate chips and raspberries. Try not to make it go to mush :L
I’d recommend doubling this mixture cause you might have to share unfortunately :L

THANK YOU! Yeah yer measuring system is so WEIRD! Like use a scales for crying out loud! *sigh* it's especially frustrating when I find an amazing thing to make but the recipe is all Americanised and any conversions just don't work out properly. Like what on earth is a stick of butter??!

Omg, I totally understand your sadness when finding American recipes. I often have the same thing but the other way around! I once tried to make a British recipe, and it took me about 3.5 hours to figure out the scale thing. To me, it seems like using cup measurements is sooooo much easier, but that's probably because I grew up learning that way! However, I know for certain that using a scale is much more accurate and consistant than using cups. Whenever I bake something like cookies using the same recipe over and over, they never turn out the same -_- Lol.
You don't know what a stick of butter is??? WHAT? It's like butter in a long rectangular packaging. Completely normal here, haha. What other kind of butter is there? My mind is blown by the varieties of butter that I didn't even know existed! LOL!

This looks so delicious! I'm a fan of white chocolate myself, but if I'm being honest I've always preferred dark chocolate. Have you ever tried white chocolate and raspberry scones? They're LOVELY!
OH MY GAWD YES! I actually had a white chocolate and raspberry scone for the first time about a week ago…. I can't believe I've lived so long without one. They are just delicious!! I'd love to make some, just don't know how … yet. ^_^
